We recently visited Graze at Hilton Kuala Lumpur for their relaunch which was graced with the presence of His Excellency Massimo Rustico – Ambassador of Italy to Malaysia. Graze is an authentic Italian restaurant which was recently helmed by the talented Chef Nicola Affatati who brings a wealth of experience and a deep passion for the culinary arts, inspired by the rich and diverse tapestry of Italian cuisine.
Chef Nicola Affatati of Puglia has gone on a culinary journey that honours the soul of Southern Italian cuisine, inspired by his early recollections of helping out in the kitchen with his great-grandmother. Puglia is renowned for its endless stretches of Mediterranean coastline, whitewashed hill towns, and centuries-old farmland. Chef Nicola’s enthusiasm for making handmade pasta, including delicious variations like Cavatelli and Orecchiette, is inspired by his heritage and pays homage to the time-honoured traditions passed down through the generations. Chef Nicola stands out for his limitless innovation, which elevates these time-tested classics to new levels of flavour and presentation.
At Graze, the culinary experience extends beyond the plate as diners can enhance their Italian dining experience with a variety of delectable beverage options, such as the iconic Italian classic Negroni and a carefully curated selection of wines that go perfectly with the Italian cuisine on offer.
Graze is also an elegant and intimate venue for private events, be it a milestone birthday celebration, an anniversary gathering, or an intimate wedding reception.

I must say that I was highly impressed by Chef Nicola Affatati’s dishes especially the Buratta and Merluzzo in Padella which really showcased the chef’s culinary skills. His combination of ingredients, taste and textures really elevates classic Italian dishes to new heights! Graze (and Kuala Lumpur) is indeed lucky to have such a skilled and talented chef sharing his expertise on our shores!
The restaurant provides a cosy and intimate setting that’s ideal for romantic dates or birthday celebrations. If you’d like added privacy you can even book one of the restaurant’s private rooms.
Don’t forget to try some of Graze’s signature Italian cocktails. The restaurant manager makes a wicked Negroni and Apperol Spritz!
